Easy pizzas

Posted by: Esper D   in Uncategorized, food, recipes

In an earlier post about vegetarian recipes, I mentioned I am vegetarian for Lent. The update about this is that I really love it. I found a new sense of passion and even freedom in cooking purely vegetarian meals.  This is something I really enjoy and I imagine most of my meals after Lent will be meat-free. I love how I have opened up my taste buds to an array of foods never experienced and recipes I find both delicious and fun to make!

Here’s a very simple dish I adapted to make vegetarian (took out the pepperoni) and I think you might like it too! It’s easy for the whole family to make and if you want, just add chicken or pepperoni or whatever if you prefer.

English muffins (I prefer whole wheat or sourdough)
Cheese (mozerella or goat cheese are both good, but any white cheese will do)
Marinara sauce (I have vodka sauce, so I use that instead)
Veggies of choice (I like mushrooms, tomatoes and black olives)
Additional toppings to consider (fresh basil, pesto, olive oil, spinich… anything)
Assemble the pizzas (I’m sure you can figure this out, lol) then bake in a toaster oven at 357 for 10-15min.

And enjoy!

Vegetarian Meals and Snacks

Posted by: Esper D   in food, recipes

Lent is here, which means vegetarian meals (fish not excluded) during Fridays and Ash Wednesday. What it means for me this year, is 40 days of all vegetarian meals (again, fish not exluded). If you are into trying vegetarian food or changing up your meals, try out these simple recipes and ideas for both vegetarian meals and snacks, whether you practice Lent or not.

Not quite “Carnival”

Posted by: Esper D   in Costa Rica, Travel, Uncategorized

When people think of Carnival, they think of the fun celebration in Brazil that takes place before Lent each year, just like Mardi Gras is celebrated in Lousiana.

However, I attended “Carnaval” instead. This took place in Limón, Costa Rica. What a blast it was! A mix between Costa Rican Latino culture and a Caribbean-Jamaican reggae one, it was definitely eclectic and enjoyable.

Please read about my adventure here

and view pics here!

Do you celebrate Carnival/Carnaval/Mardi Gras/Fat Tuesday, etc? How?

I contacted Brea  creator of My Lip Stuff after reading a review of her all natural  cruelty free  lip products, and just had to try it out for my self, after experiencing  dry cracked lips due to the harsh weather of the Midwest, My daughters also  who are “addicted” to  constantly putting on lip glosses, balms, chap sticks, as a mother I was concerned about all the “Chemicals” that  they were putting on their lips, Well alas  My lip stuff is all natural, chemical and cruelty free. You can see for your self how MY LIP STUFF came about and Brea’s Journey to create this amazing Lip Stuff HERE.

MY REVIEW.

I was truly amazed how My Lip Stuff glided on and not goopy and gloppy like most other lip products that I have tried, My lips feel smoother , My Lip Stuff glides on and comes in amazing flavors,  My girls loved all the flavors that we tried so much we don’t have a particular flavor that we prefer  over the others.

And with the ingredients being all natural, and animal cruelty free  is a plus in my book.My Lip Stuff is MidwestMom and Kidlet approved

Leprechauns at Midnight

Posted by: Esper D   in Holidays, School, poetry

I’m preparing for a group presentation tomorrow on Psychodrama and serioulsy needed a break to clear my head. So I wrote some silly poetry on leprechaun’s. It may make no sense, lol. Especially for being written at midnight!

But if you like it or think its silly, too, press the thumbs up on the article page. Thanks for viewing.
